Sey Coffee
It is located along Grattan Street in Morgantown, Brooklyn's Bushwick neighborhood, Sey Coffee is both a cafe and a roaster. Sey's focus on purchasing micro-lots, or even whole harvests from single farmers has been praised by the most discerning New York City coffee aficionados. Last year they made a 6-bag micro-lot purchase of Danilo Dones Sitio Catucai 785 from Brazil's Espirito Santo region. The beans were harvested at their peak ripeness and then steamed to eliminate any defects. They were then dried on the farm following a 36-hour dry fermentation. The result is a cup that is a little the melon and berry.
Sey's dedication to holistically improving the well-being of staff, growers and customers extends beyond the retail store. La Cabra
La Cabra, a modern specialty coffee company, was established in Aarhus in Denmark in 2012. The company began with a small shop and a team of dedicated employees. Their innovative and honest approach to providing an exceptional coffee experience has earned them a devoted following, not just in their home town but all over the world.
La Carba follows a strict procedure to identify their ideal beans. They scour through hundreds of lots each year to find beans that match their ideals. They then roast them very lightly, dialing in their desired flavor profile. This gives the coffees more vibrant flavor and clarity.
The East Village store opened last October with a sleek and minimalist design, and has been praised by coffee enthusiasts for its scrumptious pour-overs and baked goods overseen by head baker Jared Sexton, who's previously worked at Bien Cuit and Dominique Ansel.
The shop uses the La Marzocco modbar and the plates and cups are made by Wurtz ceramics in Horsens, a father and son studio. In a recent interview with Atlanta Coffee Shops General Manager Ian Walla revealed that La Cabra serves 250 different coffees a yea and typically has seven or eight varieties available at any given moment.
The Roasting Plant Coffee
The Roasting Plant is the only multi-unit retailer of coffee that roasts on site and brews to order, with every cup of coffee being roasted and brewed according to your preferences in less than one minute. It searches the globe for the finest specialty beans that are directly sourced offering customers a the option of choice and quality.
The on-site roaster employs fluid bed technology, which is a bit different to the classic drum-type machines used in many UK coffee shops. The beans are blown in a heated container with high-speed, circulating air. This keeps the beans suspended and allows for a consistent roasting rate.
I tried the Sumatran amazon coffee beans and it was a rich cup with smooth mouthfeel, dark chocolate scent was present. The bulk coffee beans began to cool as you sipped, subtle flavours of citrus fruit were evident.
The coffee that has been roasted will be poured into the store's Eversys Super-Automatic brewing Machines, and brewed to your specifications in less than one minute. Customers can pick from nine single origins and a variety blends.
Parlor Coffee
Parlor Coffee was founded in 2012 in a barbershop using a single espresso machine. It has since developed into a flourishing coffee roastery, with beans that can be found in great cafes as well as restaurants and home brewers in every city. Parlor Coffee is committed to sourcing the highest rated coffee beans-quality beans, which have all been through a long journey before they reach its roasters.
In their own words, they "have a relentless passion for craft and a belief that good coffee should be available to anyone." They achieve this with their earthy area on a residential street. Think compost bins, chalkboard welcome hand-made up-cycled goods, and a minimally-decorated space.
They roast and create their own blends as well as single-origins (there were six at the time I was there), but they also do cuppings Sundays, which are open to the public. Imagine it as a brewery tasting area where you can taste and smell the beans as they are roasted. They range from earthy to chocolatey (one was almost like tomato!). It's a bit away from the main roads, but well worth the trip.
